Menus are such a reflection of our moods and events in our lives. It’s a bit colder this week, and it’s been a lot of long days at work. So of course, the meal I want is not only easy to prepare but comforting and supportive. What type of meal is that you ask? For me, it is my mother-in-law's Green Style Roast Chicken. It really just makes you feel cozy and cared about. It does take a little longer as it cooks for an hour and half, but I put that in as soon as I get home and then do all of the other life chores while it cooks. If you feel like jazz cooking a bit, put the potatoes (use small red/or white potatoes cut into bite sized pieces) right at the base of the pan on the sides of the chicken. Cover the potatoes with a drizzle of olive oil, salt and pepper, and oregano (one tsp. overall), then cover the potatoes about a ¼ of the way with one cup of white wine and the rest chicken broth. I love using Better Than Bouillon Premium Roasted Chicken Base for making broth. Cook the potatoes the entire time you are cooking the chicken and delish! You might need to roast the potatoes on a higher temp after you take the chicken out for about ten more minutes if you like them a little crispier. Enjoy!
