One of the advantages of being gluten free at my age is that it is a great way to avoid all the unhealthy carbs. However, I truly have a penchant for those carbs and that is where gnocchi just fills one of those happy spots for me. There are so many great ways to eat it. This week we are trying a pesto gnocchi. I would like to say that I will use homemade pesto, but I don’t think that will happen. Time is always a factor. We usually make it from the basil we grow in our garden and then freeze the pesto, but we didn’t this year. I haven’t found a jarred pesto that I love yet, so if you have a great premade pesto, let us know! Enjoy!
