I think the winter meals tend to get a little heavier because I like to feel the comfort of the stews and sauces. I have to purposely throw in some lighter healthier meals. Instead of a heavier meat taco, we went with a sweet potato tostada. That still fits with our love of tacos, but it is a bit of a healthier take. We also put in an easy taco salad this week to help balance the heaviness of the stew and allow for a quick and easy meal mid-week. It’s always a balancing act, but hang in there, because adventuring with food is most always fun!
