August 3 - 7 2025

Well, I’ll admit that I’m a bit nervous. This is the first week of putting out into the universe what we eat every week. This definitely makes me feel vulnerable, but in the bigger picture of the world, I hope my planning is helpful for others in the day-to-day hecticness of balancing all the things. 


You will certainly get a feel for what we like to eat. Admittedly, most weeks I usually have some kind of taco-like meal, because I just love tacos, tostadas, enchiladas and nachos. I can’t get enough. This first week is no exception. Since it is summertime, I went a little bit different with a strawberry beef taco. Sounds odd, but I am all about trying every version of a taco. I might have cheated a bit as well and have two taco-like meals this week. I just couldn’t wait another week to try the chicken fajita skillet recipe.


I also try adding a totally veggie meal here and there (fried rice) for my husband. He is a big fan of the veggie dishes, although he likes meat meals just as much. I hope sharing meal planning makes your life just a little bit easier.
