Well, it’s difficult to get back into the routine after spring break that’s for sure. But of course I love food, so utilizing some of my favorite recipes is always a good thing. The Green Chile Enchiladas are just delish! Sometimes we double the recipe and then make an extra pan in an aluminum foil baking pan and freeze it. Then we have an extra yummy meal when we just are in a hurry or not in the mood to cook.


Also, I really try to be offline as much as possible, but shout out to my daughter for finding the viral Hot Honey, Beef, and Sweet Potato Bowls online last year. They are now one of my ultimate easy favorite meals. But of course, being from Chicago, Italian Beefs are the way to my heart. Since I had to go gluten free, they are never quite as good, but I’m experimenting with GF breads that can bring them closer to the classic style.
